So i bought a convection oven two months ago and this has awaken the baking diva in me. Really, i've been on Pinterest almost every time for baking ideas and inspiration.
So far, this Lemon Crinkles have been our favorite and i'd like to share the recipe. :0 You can expect more recipes in my succeeding posts as i am really on a baking streak!

You’ll need:

1/3 cup unsalted butter (softened)

1 cup white sugar
·
1 ½ tbsp freshly squeezed lemon juice
·
2 eggs at room temperature
·
1/8 tsp vanilla extract (optional)
· 2 drops of yellow liquid food color (optional)
· 2 drops of yellow liquid food color (optional)
·
1 ¾ cups all purpose flour
·
1 ¾ tsp baking powder
·
Zest of 1 lemon
·
Pinch of salt
·
½ cup powdered sugar AKA confectioner's sugar
Steps:
- With an electric mixer on high, cream butter & white sugar until smooth. Takes about 3 minutes.
- Add the eggs one at time, beating well after each addition.
- Mix in lemon juice, vanilla extract and liquid food color.
- Sift together the dry ingredients – flour, baking powder and salt.
- Add the lemon zest to the flour mixture.
- Using a spatula, mix the flour mixture with the butter mixture.
- Roll into 1 tbsp balls.
- Chill for a least 1 hour.
- Roll in powdered sugar.
- Baked on a preheated oven at 350 F for not more than 10 minutes.
- Take out of the oven and let cool for about 5 minutes.
Do not go over 10 minutes at the said temp, otherwise, the crinkles will dry out. They are still cooking while they are cooling.
This recipe makes about 2 dozens. Keep in air tight containers to maintain freshness.

I used an electric mixer for the wet ingredients but you can do it with a whisk, i guess.
When I mixed with the dry, I opted to use a spatula since I tend to be trigger happy with the electric mixer and I overmix the dough every time. Over mixed dough can result to tough crinkles.

Hi Ellen! Actually this is inspired by the Lemon bars on your blog. Medyo na intimidate lang kasi ako kaya ito munang pira-pirasong crinkles ang sinubukan ko. Yung lemong bars ang susubukan ko next time.

Hi there, do you use your convection oven on this recipe with the convection mode on? If yes, Do you switch pans halfway baking time? I'm always having unevenly baked goods when using 2 pans..Thanks a lot..
